Green Goodness Wraps

Sick of salad? Try rolling it up in a wrap with hummus! These wraps are loaded with fiber, vitamins, and protein– and they’re super tasty to boot. Try out different combinations of veggies, or grill them up for a more tender texture. The possibilities are endless!

What you’ll need:

  • 8-inch flour tortillas
  • Hummus of choice ( I like roasted garlic)
  • Nutritional yeast
  • Romaine lettuce
  • Spinach
  • Cherry tomatoes, halved
  • Chopped carrots
  • Chopped bell pepper
  • Sliced cucumber
  • Dressing of choice
    • Wegmans Italian dressing is my favorite, but olive oil and balsamic vinegar make a great dressing as well
  • Homemade croutons:
    • Bread, cut into cubes
    • Olive oil
    • Garlic powder
    • Salt & pepper

The how-to:

  1. To make the croutons preheat the oven to 450 degrees. Cut your bread into cubes and place them on a baking sheet lined with tin foil. Drizzle with olive oil. Sprinkle with garlic powder, salt and pepper. Bake the croutons until they’re crispy and crunchy and all kinds of delicious.
  2. Spread a generous amount of hummus onto the tortilla and sprinkle with nutritional yeast.
  3. Add the veggies and drizzle with your choice of dressing. Top with croutons. Add black pepper to taste.
  4. Roll ’em up and munch away!
